Chorizo & goat's cheese toasts recipe

Ingredients

  • 2 tbsp olive oil
  • 1 fat red chilli, deseeded, then finely chopped
  • 2 rolls, split (we used ciabatta ) or 4 thick slices of bread
  • 70g pack of sliced chorizo or other spicy cured sausage
  • 50g bag of rocket
  • 100g goat's cheese, crumbled

Method

  • First mix the olive oil and chilli in a bowl. While the flavours mingle, toast the split rolls or bread. Top with the sausage, rocket and goat’s cheese, then drizzle over the chilli oil.
